pasta & meat pie"

Ingredients

1 lb. acini di pepe pasta
8 oz. shredded mozzarella
1 doz. lg. eggs beaten
2 lbs. ricotta cheese
Parmesan cheese
1 lb. meat diced 1/8 - 1/4"(genoa salami, ham, dry sausage, pruscutto, capicolla, etc.)
4 deep dish pie crusts
4 regular pie crusts


Instructions

Cook acini di pepe, strain in colander. Rinse with cold water. Leave in colander. Cut meat into small pieces. Beat eggs in a large bowl. Add ricotta and mix well. Add cheeses and meats and acini di pepe. Mix well.

Spoon into 4 deep dish pie crusts. Cover the pies with a regular pie crust. Flute the edges. Trim excess dough. Cut slits in top to allow steam to escape.

Bake at 325' for 2-3 hrs. After 1 hour, brush milk on top to brown.
