Turkey Enchiladas from leftover thanksgiving turkey."


1 lbs Leftover Thanksgiving Turkey
1 PKG Old El Paso Taco Seasoning
8oz Kraft Mexican Cheese
1 pkg Burrito size Soft Shells
1 onion
1/2 green pepper
2 cans green enchilada sauce
sour cream
1 tbs vegetable oil


Add diced onion and green pepper to skillet with oil cook until tender.
Pull turkey off bone and shred. Add turkey with 2 cups chicken broth and 2 pkgs seasoning mix (follow pkg directions)to skillet. Pre-heat oven to 350 Warm tortillas in microwave (1minute) then fill with skillet mixture and roll into burritos closing both ends. Layer in baking pan pack them in tight. Then cover with 1- 1 1/2 cans green sauce reserving rest for dipping. Then layer on the cheese. Bake in oven for 20-30 minutes until cheese is bubbly and brown but not burned. Allow to cool 5-7 minutes and layer with your favorite taco toppings. "filling is hot but very tasty"
