Sweet Potato ConserveUser Submitted Recipe
1- 40 oz. can sweet potatoes, drained & mashed
1 & 1/2 sticks butter, melted
1/2 cup white sugar
1/2 tsp. ground cinnamon
1 cup crushed round buttery crackers
1 cup loose-packed light brown sugar
1/2 cup chopped pecans
1 tsp. vanilla extract
Mix the sweet potatoes, 1/2 stick melted butter, egg, white sugar, and cinnamon; spread in bottom of baking dish sprayed with cooking spray. Mix the crushed crackers, brown sugar, pecans, remaining 1 stick melted butter, and vanilla. Sprinkle over top of sweet potatoes. Bake in oven pre-heated to 350 degrees for 30 minutes, or until bubbly around edges.
