Cranberry Salad

“
We first had this dish at a friend's house for Thanksgiving. I was pregant with my 1st child. We have had this every Thanksgiving for 24 years."
Ingredients
1 Lg box (6 oz) blackcherry or cranberry gelatin (or 2 3-oz boxes)
1 lb of fresh cranberries chopped up)
1 med can of crushed pineapple (completely drained, juice saved)
2 orange pulps and rind of one
2 cups of sugar
1 small apple, cored and peeled (optional)
1 cup of nuts ( I use walnuts or pecans) optional
Instructions
I grind cranberries, oranges, apples and nuts in my Cuisinart food processor one at a time. Setting them aside so they are ready when the gelatin is made.
Dissolve gelatin amd sugar using boiling water (2 cups). Use pineapple juice and add enough water to make 2 cups of cold liquid. Dissolve in the warm gelatin and add grinded up fruit. Let set in refrigerator.
