The feast of St.Martin de Porres is celebrated on November 3rd.
St. Martin’s feast comes at a time when walnuts, almonds and dried figs are abundant in Malta. There are many traditional recipes involving these ingredients named after this saint. The St.Martin's cake is one of these popular recipes."
Ingredients
400 g self-raising flour
200 g sugar
200 g unsalted butter
4 beaten eggs
4 tablespoons milk
1 tablespoon mixed spice
110 g chopped walnuts
110 g chopped almonds
110 g hazelnuts
110 g dried figs
110 g dates
2 small teaspoons vanilla essence
2 tablespoons icing sugar
Instructions
Grease a 20cm cake tin with butter and cover with baking paper all round.
Sieve the flour and mixed spice. Beat the butter and sugar for about 4minutes then add the beaten eggs and continue beating the whole mixture for about two minutes.
With a metal spoon add the flour little by little , followed by the milk and the vanilla essence.
Mix everything together along with all the nuts and fruits.
if the mixture feels somewhat dry you may add more milk.
Place the mixture in the dish and bake in a moderate oven for about 80 minutes.or till you test the cake is complete by sticking a fork in its centre.
When cake is taken out of the oven some icing sugar can be sprinkled on top as well as a few chopped nuts to complete decoration
