Holiday Brunch Casserole (Grits Casserole)

People that have never eaten grits or don't think they like grits always love this casserole. I have prepared many other breakfast casseroles but everyone asks for this recipe instead"


4 cups water
1 cup grits
½ tsp salt
1 pound sausage
½ cup margarine
¼ lb garlic cheese (add 1 tsp garlic to white cheese)
½ cup milk
3 eggs, slightly beaten


Preheat oven to 375°.
Fry and drain sausage; set aside. Cook grits in boiling salted water 5 minutes. Add margarine and cheese. Stir until melted. Remove from heat. Add milk, eggs and sausage. Mix well. Pour into an 11 ¾ x 9 3/8 x 1 ½ " aluminum pan.
Bake at 350° for 30-45 minutes or until slightly browned. Sprinkle paprika on top of casserole

Can be made ahead. Wrap in foil and freeze up to 3 months. Thaw overnight in refrigerator and bake at 375° 50-55 minutes.
