Sweet Potato Casserole


-3 cups cooked sweet potatoes (3-4 small sweet potatoes)
-1/2 cup sugar
-1 stick butter
-1 tsp. vanilla
-2 eggs
-1/4 cup milk
-1 cup dark brown sugar
-1/2 cup flour
-1/2 cup chopped pecans
-1 stick butter


-Peel and cube sweet potatoes
-Boil sweet potatoes until spoon tender
-Drain potatoes
-Pre-heat oven to 375
-Measure 3 cups of cooked sweet potatoes and place in large mixing bowl
-Add butter, sugar, eggs, milk, and vanilla
-Use a stand or electric mixer to combine all ingredients.
-Spread the potato mixture into a greased 11x13 pan
-Cut butter into small pieces
-Combine brown sugar, flour, chopped pecans, and butter using food processor with dough blade or pastry blender.
-Mix topping until well combined
-Sprinkle topping over sweet potato mixture
-Bake in pre-heated oven for 20 to 25. Potatoes should be bubbly and topping will be golden.

Note: Potatoes and or topping can be prepared and refrigerated until ready to bake.
