A delightful side casserole featuring harvest vegetables that will please even the finicky-est eater at the Thanksgiving or Christmas table. You can't eat just one helping! It is a crowd pleaser!"
Ingredients
1/2 stick butter or margarine
1 small onion, diced
1 10oz. frozen broccoli spears, cooked to package directions
1 8oz. cream corn
1 cup seasoned dry herb stuffing mix
1 large egg, slightly beaten
Instructions
Grease or butter a 1 1/2 quart casserole. Melt the butter in a pan on the stove over medium heat. Set aside. Dice 1 small onion finely. Set aside. Cook frozen broccoli spears according to package directions. Drain off water. Cut into bite size pieces when cooled. In a bowl, combine melted butter, diced onion, cut broccoli, cream corn, herb stuffing mix and slightly beaten egg. Stir gently to mix. Pour mixture into prepared casserole dish. Bake at 350 degrees for 30 minutes. (Can be doubled very easily! )
