finalist Peanut Butter Puffs


1 1/2 cup all-purpose flour
1/2 cup sugar
2 tsp baking powder
1/4 tsp nutmeg
1/8 tsp salt
1 large egg
1 cup milk
1/3 cup butter, melted
1/4 cup peanut butter
1/4 cup sugar
1/2 tsp cinnamon
1/4 cup butter, melted


1. Preheat oven to 350°F. Grease 12 muffin cups; set aside. 2. In a medium bowl, stir together flour, the 1/2 cup sugar, baking powder, and salt. Make a well in center of flour mixture. In a small bowl, beat with a hand mixer, the egg, milk, butter and peanut butter until smooth. Add to flour mixture; mix until will blended. 3. Spoon batter into prepared muffin cups,filling 2/3 full. Bake 20 to 25 minutes or until golden. 4. In a small bowl, combine the 1/4 cup sugar and cinnamon. Remove muffins from the muffin cups and immediately dip muffins into the melted butter, then into the cinnamon mixture. Serve warm. Makes 12 muffins
