Chocolate, Almond & Fig Breakfast Bites
1 cup raw almonds
1 cup raw walnuts
2/3 cup chopped pitted baking dates
2/3 cup chopped dried black mission figs
1 Tbs coconut oil
2 Tbs honey
1 tsp almond extract
1/2 tsp vanilla extract
pinch of salt
2 Tbs cocoa powder
1. In a food processor, grind the almonds and walnuts until they are a course texture. Add the dates and figs and process until they are well combined.
2. Add the coconut oil, honey, almond and vanilla extracts, salt and cocoa powder. Process again until everything is combined and uniform in texture.
3. Form the mixture into balls by the heaping tablespoonful and place them into an airtight container. For best results, store in the refrigerator.
