Pineapple Pepper Steak
“
Very quick and easy. Even easier if you can convince yourself to slice up the round steak before you freeze it so you have it on hand when you are in a hurry"
Ingredients
1 pound round steak thinly sliced
2 tblspn cooking oil
1/2 cup beef broth
1 can (approximately 14 ounces)of pineapple chunks, drained but reserve liquid
1 large green bell pepper, cleaned & thinly sliced
1 tablespoon of corn starch
2 teaspoons of soy sauce
Instructions
Heat oil in large skillet on medium high heat. Brown the meat on all sides. Reduce heat to medium. Add beef broth and simmer until liquid is reduced to half. Add green peppers and continue to simmer for 3 minutes. Mix pineapple juice, soy sauce and cornstarch until smooth. Add to meat and stir until well combined and begins to thicken. Add in pineapple chunks. Heat another 3 minutes and serve hot over rice.
