Spinach with Muenster and Ricotta
1 pound of muenster cheese, cut thin
15 oz ricotta
1 frozen package of leaf spinach
touch of salt and pepper
chives if desired
Cook the spinach or microwave in box for approx 5 mins.
Either way, when done drain spinach very well and then wrap in paper towels and drain more.
Line pie pan with muenster cheese to make the crust.
Add spinach, egg, ricotta and touch of salt and pepper and chives if desired in a mixing bowl and combine well.
Add to pie pan.
Cover pie with the rest of the muenster cheese to make the top crust.
Cook in 400 degree oven for approximately 30 minutes uncovered check to see that top is bubbly and crust is slightly brown.
Eat warm - this could also be eaten as a dinner.
