White Chicken Chili
3 - cups cooked chicken, cubed
1 - medium yellow onion, chopped
1 - 4oz. can of chopped Green Chilies
3 - 15oz. canned Great Northern Beans drained and rinsed
4 - cups Chicken Broth
1 Tbs. Oregano
1 Tbs. Cumin
1 Tbs. Red Pepper Flakes
2 Tbs. Olive Oil for sauté
1 - cup Heavy Whipping Cream
salt and pepper to taste
Chopped green onion for garnish
Heat the olive oil in a Dutch Oven over medium high heat and sauté the onions, oregano, cumin and red pepper flakes until softened, about 3-5 minutes. Add the green chilies and blend.
Add the chicken broth and heavy whipping cream and bring to a boil, then reduce to a simmer.
Add the chicken and beans then continue to simmer on low for 30 minutes, stirring occasionally, until the chili thickens slightly.
Serve warm garnished with chopped green onions.
