Mango Salsa Verde
Grilled Tomato Mango Salsa Verde
3 grilled roma tomatoes
2 or 3 grilled Jalapeños (the more the hotter)
1 ripe mango diced
1/4 cup of pulp free 100% orange juice
Juice and zest of 1 lime
1/4 of medium red onion diced.
1/2 a bunch of cilantro stems removed.
Pinch of salt to taste
Grill roma tomatoes and jalapeños.
In a blender add half the mango, the grilled tomatoes, the jalapeños, the orange juice, the red onion, half the cilantro and the salt and puree.
Pour into serving container.
Add remaining mango, cilantro, lime zest and juice and mix together with a spoon.
Serve with tortilla chips, tacos, over shrimp, chicken, fish or beef and enjoy.
