Bacon Wrapped Stuffed Dates
Sweet, salty, crunchy, gooey bites of perfection
12 pieces of bacon, cut in half
24 whole roasted almonds
4 oz Gorgonzola cheese
24 toothpicks to secure and serve
Preheat your oven to 375. Partially cook the bacon in a skillet (enough to cook out some of the fat but you don't want it crispy). Once the bacon has been partially cooked set aside to cool.
While the bacon is cooling, stuff the dates with an almond and a pinch of the Gorgonzola cheese. Wrap the bacon around the stuffed date and secure with a toothpick. Bake on a rimmed cookie sheet for approximately 7-9 minutes. Remove from the oven and drizzle with honey. Serve warm and enjoy!
Note: You'll want to eat these right away but they need a little bit of time to cool down...I've taken a bite too early and it's like molten lava! Delicious molten lava but way too hot right out of the oven! Cool for approximately 10 minutes :)
