Delicious Peas Patties
4 large boiled potatoes
1/2 cup partially boiled peas*
1/2 cup dry desiccated coconut
1/2 tsp. Indian spices (also known as garam masala)
1 tsp. mango powder
1/2 tsp. green cardamom powder
salt as per to taste
1/2 cup oil
2 tbsp. corn flour
1 cup breadcrumbs
*Boiled corn kernels can also be used instead of peas
Remove the skin and grate the potatoes.
Add the salt and corn flour and mix well.
Heat a wok on high heat, then switch off the heat and put coconut and raisins.
Take the green peas, add Indian spice powder, mango powder, salt, coconut n raisins, cardamom.
Place enough of potato paste on your palm and press it to form a small patty, 2" in diameter and 1/2" thick. Continue with rest of the potato.
Place 1 tsp of peas mixture in the centre of patty; cover it with second patty.
Seal the edges of the patty with fingertips and make a circular shape (I had made a heart shape), and roll it on bread crumbs.
Heat a pan and put about 2 tablespoons of oil.
Working in batches, sauté the patties until golden brown and crisp.
Serve with tomato sauce.
