Fall Colors Lentils Soup
1 and 1/2 cup of lentils
2 cups of tomato juice
5 medium tomatos
1 red onion
4 tablespoons of fresh rosmary
2 tablespoons of extra virgil olive oil
salt and pepper
Put the olive oil in a large pot and turn the stove on medium.
After 3 minutes add the finely chopped onion and let it simmer. Add the sausages in little pieces.
When the onion turns into a golden color add the lentils and turn the stove on low.
Let it cook for 10 minutes and then add the tomatos, roughly cutted.
After a few minutes add the tomato juice, the rosemary, salt and pepper (for an extra kick you can also add a little bit of chili powder).
Cover the pot and let it cook for 30 minutes.
Garnish with fresh rosemary and serve warm with garlic bread.
