Tomato, Olive & Manchego Chopped Salad

INGREDIENTS
1 yellow bell pepper diced
1 orange bell pepper diced
2 cups cherry tomatoes, halved
4 celery stalks thinly sliced
1/4 cup pitted large green Spanish olives quarted
1/4 red onion finely diced
1 Tablespoon fresh flat leaf Italian parsley
1 Teaspoon fresh thyme
1/2 pound manchego cheese
Vinaigrette
1/4 cup olive oil
3 tablespoons sherry vinegar
1 tsp. Dijon mustard
1 clove chopped garlic
1/4 tsp. kosher salt
1/2 tsp. pepper
Instructions
Salad ingredients can be made and mixed ahead. Make dressing and put in fridge up to two weeks. Mix ingredients with dressing two hours ahead of serving.
