Sweet Potato, Spinach and Chicken Dinner
1 large sweet potato, baked and cooled
1 cup cubed skinless, boneless chicken
2 cups packed fresh spinach leaves
1 cup 2% milk
Salt to taste
Peel and mash sweet potato, place in medium bowl and set aside. Bring a saucepan of lightly salted water to a boil. Add the cubed chicken and cook uncovered until no longer pink inside, about 10 minutes. Remove and add to sweet potato on bowl. Place spinach in hot water and let set for 5 minutes to gently cook. Remove spinach with a slotted spoon and add to bowl. Chop mixture in a food processor adding milk as needed to make a chunky mixture, season with salt. Serve warm or freeze in serving sized portions. This makes a great stage 3 baby food, as well as a pasta sauce for grown ups, so make and share! Makes 3-4 servings.
