Special Pork Chop Dinner
“
Good fall dinner for two."
Ingredients
1 medium unpeeled cooking apple, sliced
1 medium sweet potato
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
2 pork rib chops, 1/2 to 3/4 inch thick
Instructions
1. Pre-heat oven to 350°F. Spray a casserole dish with nonstick spray.
2. Place apples and sweet potatoes in a casserole dish. Gently stir in the brown sugar and cinnamon.
3. Remove fat from pork. Cook pork in a hot skillet lightly coated with olive oil for about 5 minutes, turning once, until light brown.
4. Place pork in single layer over the apples and sweet potatoes. Cover and bake about 45 minutes or until pork is slightly pink when cut near the bone, being sure the apples and sweet potatoes are tender.
