Peanut Butter - Banana Oatmeal muffins
My family loves these Elvis inspired muffins. My son says they are the best he's ever had.

INGREDIENTS
3 very ripe bananas
1/3 cup crunchy peanut butter
1/4 cup brown sugar
1/4 cup plain yogurt
1 large egg
1 Tbsp canola oil
1 tsp almond flavoring
1 cup whole wheat flour
1/2 cup rolled oats
1/4 cup flax seeds
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup white chocolate chips (optional)
Instructions
Preheat oven to 375°F. Spray extra large muffin tins with nonstick cooking spray, or use paper liners. In a large mixing bowl, mash bananas. Add peanut butter, brown sugar, egg, yogurt, oil, and almond flavoring. Mix well.
In a separate bowl, mix dry ingredients, except for white chocolate chips. Gently blend dry and wet ingredients, until barely mixed. Fold in white chocolate chips. Divide mixture into 5 extra large muffins compartments. Bake 25 - 30 minutes until tops spring bake when touched, or toothpick inserted comes out clean.
