Easy Homemade Enchiladas
1 lb ground hamburger
1/3 cup flour
2 1/2 tbsp chile molido puro med hot
3 cups cold water
1 1/2 tbsp chicken flavor bouillon (caldo con sabor de pollo)
dash of salt (optional)
6 corn tortillas
1 cup cheese
Cook hamburger. When it's mostly cooked, add flour and make a rue. Do not drain grease! When rue is just about done, turn down heat to med/low, add the chile powder. Do not stop stirring and after about 30 secs, add water and continue to stir without stopping. It will thicken up! If too thick, add more water. You want it thinner than gravy as it will continue to thicken as it cooks.
Turn to simmer. Get your stack of corn tortillas and cut it like pizza slices. Add a circle layer around the edges of your pan. Get a spoon to gently push down until they are lightly covered with the sauce, sprinkle desired amount of cheese and onion around. Keep layering and repeat above until all the corn tortillas are gone cover and simmer for 15 mins. No need to stir! Corn tortillas will soften up and cannot be stirred in order to keep it layered.
