lb of stew beef and a beef soup bone
2 large vidalia onion
3 cans whole tomatoes
large bag carrots
large bunch celery box of low sodium chicken stock 1/2 cup of red wine
In small amt olive oil, sauté your ground up vidalia onions use at least 2. Cut up all stew beef in small pieces and use soup beef bone cutting up beef in small pieces away from bone also and sauté with onion. Next, grind up all vegetables either by hand using a hand grinder or use a food processor. After sautéing your onions, add garlic 2 to 3 cloves. Next add cut up mashed whole tomatoes 3 large cans and add all your hand grind vegetables. Simmer and add chicken stock slowly as needed stirring so vegetables do not stick. Slowly simmer your soup adding chicken stock as needed for 2 to 3 hours and The last hour or so add 1/2 cup of any good red wine. total simmering time to cook soup and prep time about 4 hours. ENJOY !
