Sweet Potato Orzo Soup


1 Chopped Onion
2 Sweet Potatoes (Peeled And Cubed)
2 Carrots (Sliced
3 Plum Tomatoes (Cubed)
4 Cups Vegetable Stock.
1 Tsp Basil.
1 Cup Evaporated Milk
1/2 Cup Orzo


Add onion to 2 tbsp olive oil.
Cook for 5 minutes.
Add remaining veggies with 4 cups vegetable stock and simmer for 20 mins.
Puree veggies.
Add milk and orzo.
Simmer for 10 mins.
Serves 4
