Butternut Squash with Sweet Potatoes

Ingredients

2 cups diced butternut squash
1 cup diced sweet potatoes
2 cups chicken broth
1 cup water
1 Med diced onion
Salt & pepper
10 oz can coconut milk


Instructions

Place squash and potatoes into crockpot. Add 1 cup chicken broth, water, onion, salt and pepper. Turn crockpot on low for four hours or until dinner is ready. Remove from crockpot and place in blender. Add the rest of chicken broth and coconut milk. Blend until smooth. Top with sour cream and chopped green onions. Enjoy. This recipe would create less mess with the new Cuisinart blender :-)
