Summer Potato Salad

Picnic Special


2 lbs potatoes(red or yukon gold)about 6 medium
1/4 cup chopped green onions including green part
1 tsp salt
1/8 tsp pepper
1/4 cup Italian dressing
3 stalks chopped celery
4 hard cooked eggs chopped


Wash potatoes and boil with skins on in salted water about 30-35 minutes, or until just tender. Cool and peel if desired. In a re-closeable container cut cooled potatoes into cubes and add onions celery and salt and pepper. Stir just to mix, very carefully mix in chopped eggs. Add salad dressing and mix until all coated. Store in refrigerator until ready to use. So good for a barbecue cookout or picnic.
