Cheesy Baked Mashed Potatoes

Calories don't count...
These are THE BEST mashed potatoes you will ever eat."


5 lbs of potatoes (I use Idaho)
1 lb cheese (I use a blend of whatever cheese "scraps" the grocery has)
1 c. heavy cream or 1/2 and 1/2
1 stick butter
Salt, pepper and garlic to taste
Enough parmesan to top.


Peel, cut and boil potatoes.
While hot, add to stand mixer.
Add in all of the butter and cream
Mix on low until smooth, then increase speed and slowly add cheese scraps until smooth.
Add salt and pepper to taste and blend well.

Put into deep baking pan and sprinkle the top with an even coating of parmesan cheese.

Bake at 450 for 20 minutes or until golden brown on top.
