Roasted Primavera Sweet Potato Hash

This is a great side dish that the whole family will love! It is full of vitamin-rich vegetables that are cooked soft enough for everyone to enjoy. Roasting the vegetables brings out their natural sweetness and will entice even the pickiest eaters!"
Ingredients
4 cups small diced sweet potatoes
2 Tbs extra virgin olive oil, divided
1 tsp sea salt
1/2 tsp black pepper
1 cup small chopped broccoli pieces
1 cup small diced zucchini
1/2 cup chopped red onion
1/2 cup chopped green pepper
Instructions
1. Preheat the oven to 425 degrees. Toss the diced sweet potato with 1 Tbs olive oil, salt and pepper and place on a large baking sheet and bake for 10 minutes.
2. Toss the broccoli, zucchini, onion, and green pepper with 1 Tbs olive oil, and after sweet potatoes have cooked for 10 minutes, add them to the pan and toss everything together. Bake for 15 more minutes or until vegetables are soft and just starting to brown.
