Brown Rice and Mango Salad

Ideal for all family, but special for babies"

Ingredients

1 cup long-grain brown rice
Salt
1 large lime
2 tbsp olive oil
1/4 tsp ground black pepper
1 ripe mango, peeled and cut into 1/2 inch cubes
1/4 cup chopped fresh cilantro
2 green onions, thinly sliced


Instructions

- Prepare brown rice as label directs, using 1/2 tsp salt. Rinse with cold running water; drain well. Meanwhile, grate 1/2 tsp peel and squeeze 2 tbsp juice from lime.

- In bowl, mix lime peel, lime juice, olive oil, pepper, and 1/2 tsp salt. Add rice and toss to coat. Add mango, cilantro, and green onions; toss until evenly combined.
