Gunter Family Squash Casserole

I honestly don't recall where I got this recipe, but it is by far the best squash casserole I've ever had! You won't be disappointed in this one! :)"


2 lbs. yellow squash cut into 1/4" slices
1/2 cup water
1/2 tsp. salt
1 cup chopped onion
1 cup chopped red bell pepper
1/4 cup melted butter
1 egg (beaten)
1 cup shredded cheddar cheese
2/3 cup mayonnaise
2 tsp. sugar
1/4 tsp. pepper


Heat oven to 350° F. Combine squash, water and salt in pan, and bring to a boil. Cover, reduce heat and simmer 10 minutes or until tender. Saute onion and red bell pepper in butter until tender. Combine vegetables and remaining ingredients. Spoon into a lightly greased 9" x 13" baking dish. Bake for 30 minutes. Garnish with chopped red peppers if desired.

To make ahead, prepare as directed but do not bake. Cover and chill for up to 2 days. Remove from fridge and let stand 30 minutes. Bake as directed.
