Southern Corn Bread

the best corn bread you have ever tasted"


2 Boxes of Jiffy corn bread mix
12 oz cottage cheese (small curd)
4 large eggs
1 large onion chopped small
1 box frozen chopped broccoli
1 can green giant whole corn (Drained)
1 stick butter 4 oz


Pre-heat oven to 375

Start by melting the butter in a 9 X 13 baking pan set to one side.
Cook the broccoli according to the box
Mix eggs,cottage cheese and onion together
Add the broccoli stir to combine
Add the jiffy corn bread mix stir till all is moist.
Pour mix over top of the butter, tap pan to even it out.
Bake at 375 for 45 to 55 minutes and top is a light golden brown

Foot note I like to sprinkle a little brown sugar on the top before I put it into the oven gives it a little sweetness to it
Can be served hot,warm or cold
