Savory Succotash

“ The great taste of southern style succotash . The Paprika adds a great smoky flavor like bacon would and fresh herbs add a brightness to the dish."

Ingredients

3 cups Frozen Lima Beams
3 cups Frozen Corn
1/4 small chopped sweet onion
1/4 tsp salt
1 tsp smoked paprika
1 tbsp minced fresh thyme
2 tsp lemon juice
2 cups water


Instructions

In medium sized pot combine all ingredients. Stirring to make sure ensure spices are mixed in simmer for 10 min or until liquid has reduced by half and beans are tender. Use blender to puree ingredients until smooth.
