Garlic Mashed Potatoes Souffle
User Submitted Recipe(a Holiday favorite with my family)
Ingredients
4 lbs. Yukon Gold Potatoes (peeled then boiled with garlic cloves & Mashed)
5 garlic cloves
3/4 c. milk or cream
1 tsp. salt
1/2 c. (1 stick) butter
2 eggs - separated
1/4 tsp. white pepper
Pinch cream of tartar and salt
Instructions
In Cuisinart food processor, combine mashed potatoes/garlic mixture, milk (or cream), 1 teaspoon of salt, butter, egg yolks and white pepper. In a separate bowl beat 2 egg whites with a pinch each of salt and cream of tartar until they hold stiff peaks and then fold them into the potatoes. Transfer the mixture to a buttered 1-1/2 quart casserole and brush the top with melted butter. Bake the casserole in a preheated oven (325 degrees F.) for 45 minutes, or until it is golden and heated through.
