Asparagus Souffle

We call this souffle but I have no idea why. It is a mixture of white sauce and asparagus with cheese. We have tried cheddar cheese but it doesn't melt as well. This has been a staple at holiday dinners for as long as I can remember and I know my mom had it as a child too. Fresh asparagus also doesn't work."

Ingredients

White Sauce
1 cube of butter
3-4 tablespoons of flour
1 quart of 1/2 & 1/2 + juice from cans of asparagus if needed to thin sauce.

2 - 3 cans of Asparagus
Saltine Crackers
5 Hard boiled Eggs
1/2 pound of American Cheese not sliced.


Instructions

White Sauce
Melt 1 cube of butter in heavy saucepan. Add enough flour to make a roux. Add about 1 quart of 1/2 and 1/2. Let thicken. Remove from heat.

Place 1/2 cup of white sauce in casserole dish. Top with 6-10 asparagus spears. Crush 4 crackers in hands and spread on top of asparagus. Slice 2 Hard Boiled Eggs and put over crackers. Top with thick slices of American cheese. Repeat 3 more time ending with white sauce with cheese.
