Mildred's Sweet Potato Casserole

3 cups mashed sweet potatoes (can use fresh or canned)
1 cup sugar
1/2 cup butter
3 eggs, beaten
2 teaspoons vanilla
1/2 teaspoon ground nutmeg
1 cup sour cream
pinch of salt
pinch of soda
Optional topping: marshmallows, pecans or both
Instructions
Preheat oven to 350. Mash sweet potatoes (either fresh boiled or canned) Stir in the sugar, butter, eggs, vanilla, nutmeg and sour cream. Mix well. Add salt and soda and stir.
Spread the mixture in a 1/1/2 quart baking dish and bake uncovered for 35-45 minutes. When done, place marshmallows and pecans (if wanted) on top and put the casserole back in the oven until the marshmallows are melted and lightly browned. On occasions I will double this recipe but use only 4-5 eggs rather than 6.
