It is a awesome recipe which my son Alan loves."


1 slice whole wheat bread
1 egg, yolk separated from the white (take care not to break the yolk)
1/4 cup cottage cheese
little unsalted butter


First preheat the oven to 350 deg F, 180 deg C. Then toast the slice of bread and spread it with a little butter. Place the egg white in a medium bowl and whisk it with your hand or with a electric whisk until it forms stiff peaks and you can turn the bowl upside down without the mixture sliding out. Spoon the egg white on to your slice of toast and arrange in a circle, leaving a hole in the middle. Drop the yolk into the hole. Then Sprinkle all over 1/4 cup cottage cheese . Place in the oven and bake for around 10 minutes, until the yolk is firmly set. Now it is ready to serve.
