Sweet Potato Whip

Mild fruity flavor with a smooth and light texture.
This is a wonderful side dish for little ones as well as adults. Using orange juice in this recipe enhances the sweet potatoes without being overpowering."


40 oz cut sweet potatoes, drained
3/4 cup brown sugar
4 Tbl. butter, soft
3 Tbl. orange juice
1 teas. salt
1/2 teas. vanilla extract
2 cup mini marshmallows


Preheat oven to 350 degrees and oil or butter a 11 X 7 casserole dish.

Put drained potatoes into a bowl and beat with electric mixer until smooth. Add all other ingredients except marshmallows and beat with mixer until thoroughly combined.

Spread potato mixture into dish. Top evenly with marshmallows.

Bake at 350 degrees for 20 to 25 minutes being mindful not to burn the marshmallows.
