Mexican Stuffed PeppersUser Submitted Recipe
Very flavorful change from basic stuffed peppers."
12 large peppers
2 lb ground beef
3 packages taco seasoning
2 cups minute rice
1 12 oz package shredded taco cheese
1 large tomato
2 cans tomato soup
1 jar taco sauce
Brown ground beef, drain. Add taco seasoning packages and water according to package directions, set aside. Make 2 cups of minute rice. Mix rice, seasoned beef, and taco cheese. Dice tomato and add to filling mix. Cut tops of peppers and clean insides-fill with taco filling. Put in glass pan or casserole dish. Mix tomato soup and taco sauce - pour over and around peppers. Bake at 350 degrees for one hour.
