Squash vegetables mash with beef and rice
When you plate it I like to put the rice on the bottom and spoon the charcican on top then I add some hot sauce on top and serve.
This is such a delicious and satisfying dish. You can also eliminate the meat in it and it becomes a vegetarian dish!"


1/2 large Squash or pumpkin
4-5 Potatoes
1- can Green Beans
1- can Corn
2lbs.-Ground Turkey or Ground Beef
1-Chicken bouillon
1-chopped white onion
1-garlic clove minced
1-small can tomato sauce
1-tsp cumin powder
1-packet Sazon-Goya w/cilantro & achiote
Salt & Pepper to taste
2 cups basmati rice
3 cups water
2 tblsp olive oil
2 tblsp salt
2 tblsp garlic powder


Peel the potatoes and a big piece of squash. Put in a pot of boiling salted water with the bouillon and boil until tender.
In a pan brown the ground turkey or beef with all the dry ingredients.
Drain any fat from pan. Drain vegetables but reserve 1 cup of the vegetable water.
Add the onion, garlic and sauce to the browned turkey or meat and continue cooking until it comes to a boil.
Mash the potatoes & squash leaving a bit chunky, not too mashed.
Put rice, water, oil, salt, and garlic powder in a rice cooker and cook until it beeps!
Finally, add the cans of cut green beans and corn to the squash and then add the meat and mix together on low flame until it is all heated if you see that it is too dry add some of the reserved water making it moist. It should have a soft consistency but not too loose!
