Blue Mountain Chicken Casserole

Chicken Casserole
Easy chicken-cheesy and rice dinner. A casserole for any time of the year because we often have leftover chicken or rice and the remaining ingredients are usually kitchen staples. Make ahead for a busy day tomorrow. Even the children like this one! This one tastes great the day after too."


2 cups Cooked rice
1/4 cup Chopped onion
1/4 cup Chopped celery
4 Hard boiled eggs roughly chopped
2 cups Cooked diced chicken
1/2 cup Mayonnaise
1/2 cup Cream of condensed chicken soup
1 cup Cheddar cheese shredded
1/2 Water
1/2 tsp Salt
1/4 tsp Black pepper
1 tbsp Lemon juice
3/4 cup Shredded cheddar cheese for topping.


Place ingredients into large mixing bowl in the order listed in recipe, mix together and pour into greased cooking pan 11"x8" and smooth out evenly. Heat oven to 350 degrees. Top with shredded cheese and bake for 30 minutes and serve with fruit or salad.
