This is really good and very filling...and it makes a TON. You can add just about any type of bean you like to this and it still tastes great! Serve this with cornbread, Doritos, tortilla chips, Fritos, etc. Definitely on my regular rotation during the cold months of fall and winter."
Ingredients
2 lbs of ground beef
1 chopped onion
1 package of taco seasoning mix
1 package Ranch style dressing mix (I use Fiesta Ranch)
1 can of diced tomatoes*
1-2 cans of RoTel Tomatoes*
1 can of diced green chiles*
1 can of pinto beans*
1 can of ranch beans*
1 can of black beans (I rinse these)
1 can of light kidney beans*
1 can of dark kidney beans*
1 can of hominy*
1 can of whole kernel corn*
*DO NOT DRAIN
Instructions
Brown 2 lbs of ground meat & 1 chopped onion in a very large stock pot(Drain if needed)
Add ALL other ingredients and simmer for about 1/2 hour to 45 minutes on stove top. That's it! You can opt to put this in a crockpot instead and let it simmer on low all day.
