Pat's Clam Spaghetti

Clam Spaghetti
This recipe was given to me by my aunt, whom received it from her sister-in-law. Pair this with garlic bread and a side salad and it is a scrumptious meal! Rarely have I seen a spaghetti recipe that didn't have a tomato based sauce; but this one is outstanding!"


1/4 cup olive oil
1 tsp red chili pepper
1 large onion chopped
3-4 garlic cloves minced
1 TBSP. Basil
1 TBSP. Oregano
3 small cans minced clams (do not drain)
1 cup chopped fresh parsley
1 lg. jar pimentos
16 oz shredded Parmesan cheese
1 lb. spaghetti, broken in half, cooked and drained (do not rinse)


Over medium heat in a large non-stick stock pot, cook onion & garlic until onion is soft. Add all other ingredients except spaghetti and cheese; simmer till warmed through. In the meantime, cook spaghetti. AS SOON as spaghetti is cooked, add spaghetti and cheese to other ingredients. Mix well and serve immediately.
