Gluten Free Kabobs


Chicken Tamari Kabobs
Grill chicken separate. Grill veggies last as they cook quickly. Toss spinach and black beans. Serve chicken and veggie kabobs over salad. Enjoy."

Ingredients

2-3 pounds of chicken breast
2 cup tamari sauce
one red, white and yellow onion, each
8 oz. mushrooms
lemon
lime
garlic cloves
red & green pepper
8 oz. cherry tomatoes
1 lb. spinach
1 can of cuban black beans
grilling skewers.


Instructions

Cut chicken breast into 1 inch cubes. Food process 5 garlic cloves, 3 tablespoons lemon juice, and 1/4 of each onion, add to tamari sauce. Reserve some marinade for kabobs. Pour most of the tamari marinade over chicken cubes. Marinate overnight or quickly for 1 hour. Cut remaining onions for kabobs. Soak wooden skewers in water for 30 minutes. Drain chicken, place on grill for about 10-15 minutes, varies on size and grilling method. Place tomatoes, onions and mushrooms on separate skewers, let marinade for about 30 minutes, brush with olive oil and grill for about 5 minutes. Serve over spinach and cuban black beans.
