Sweet Potato Lentils

1 cup dried lentils
1 tablespoon olive oil
1 stalk celery, diced
1 small onion, diced
2 medium carrots, peeled and diced
1 clove garlic, minced
2 medium sweet potatoes, peeled and diced
3 cups chicken or vegetable stock (or low sodium store bought)
Instructions
Soak lentils in water for about 30 minutes; drain.
Meanwhile, heat oil in large pot on medium-high heat. Add celery, onion, carrot, garlic, and sweet potatoes and cook about 5-6 minutes until tender. Add lentils and stock and simmer on medium heat until potatoes and lentils are tender, approximately 25-30 minutes. Transfer to processor and puree mixture until desired consistency.
