1 Unbaked 9” pastry shell
3-4 Ripe Tomatoes, sliced
Salt and Pepper to Taste
1/2 Cup Snipped Fresh Chives
2 Tbsp. Snipped Fresh Basil – or – 2 Tsp. Dried Basil
2 Cups Shredded Mozzarella Cheese
1/2 Cup Mayonnaise
Press pastry shell into quiche dish. Bake at 425 degrees for 5 minutes
Reduce oven temperature to 400 degrees.
Arrange tomato slices in crust.
Add salt and pepper to taste.
Sprinkle chives and basil on top of tomatoes
Combine cheese and mayonnaise.
Spoon over tomatoes and herbs in dish.
Bake at 400 degrees for 35 minutes.
