Lee's Ham Pineapple PompomsUser Submitted Recipe
1 slice (1 lb. fully cooked ham ground in Cuisinart blender)
1 cup uncooked white rice
1 teas. horse radish
1/4 cup finely chopped onion
1/2 cup finely chopped celery
1 egg (slightly beaten)
3/4 cup sour cream
Cook rice according to directions.
Put cooked rice in large bowl. Add ground ham, onion and celery & toss lightly.
Place beaten egg and horse radish in sour cream & mix.
Add sour cream mixture to ham, rice, onion, celery and mix well.
Put pineapple slices in bottom of shallow pan. Form rice, ham mixture into balls and place on pineapple slices. (An ice cream scoop works well or form balls with clean hands). Pour a teaspoon/tablespoon of pineapple juice on top of each pompom ball.
Bake 350 degrees 30-40 minutes.
Serve pompoms topped with sour cream. Enjoy!
