Jamaica Chicken

My mom has been making this for me since I was a little girl back in Australia. It has gone all over the world - from the UK to Australia and now to the US! It is probably the most requested recipe in our family with all of us now making it for our families."


1 chicken
Broccoli florets to cover a baking dish
1 tin of condensed chicken soup (cream of chicken soup)
2 tablespoons mayonnaise
1 teaspoon curry powder
4 fl oz chicken stock (you can use bought stock or juices from roasted chicken)
1 packet potato chips
Cheddar cheese


Use a ready cooked chicken, or you can roast one. Shred the chicken

Steam the broccoli for a few minutes - don't overcook it! Cover the base of the baking dish once it's ready.

Cover the broccoli with the cooked meat from chicken.

In a dish mix the mayonnaise and the can of chicken soup. In a small dish, add a little of the stock to the curry and then mix. Add this mixture to the soup mixture. Mix well.

In a small pan, heat the mixture through but don’t boil it.

Pour the mixture over the chicken and broccoli.

Crush the potato chips and add grated cheese – mix and sprinkle on top of the chicken and broccoli mixture.

Bake in oven 350 degrees for 35 – 40 minutes. It should be ready when the top is golden and bubbling.
