Pork Shephards Pie

My mom is awesome! She has worked hard her whole life and taught her girls valuable cooking, life and homemaking skills. She is now 78 years old dealing with several health issues but her strength, strong will and family keeps her going. We love her very much!"


1 pound of ground pork
1 clove of minced garlic
1 medium onion chopped
1/4 cup green pepper chopped
2 tablespoons flour
1 teaspoon ground sage (optional)
1/2 teaspoon of thyme (optional)
1 teaspoon salt
2 teaspoons black pepper
2 cups water
2 cups whole kernel corn
4 cups mashed potatoes
2 tablespoons parsley


Brown the pork, garlic, onion and green pepper in a skillet over medium heat for 10 minutes. Stir in flour, sage, thyme, salt and pepper. Add water and cook until mixture bubbles and thickens. Pour mixture into a 3 quart casserole. Layer corn on top of pork mixture. Spread mashed potatoes over the top sprinkle with parsley, bake at 350 degrees for 30 minutes. Five or ten minutes before its done I sprinkle the top with a mixture of mozzarella and asiago cheese, this is optional.
