We ask for this all the time because it was SO good and even better as "left-overs" (which was a rare event!!)."
Ingredients
1 Clove Garlic, minced
1 Medium Onion, chopped
1 Medium Green Pepper, chopped
1 pound of Ground Beef
1 can (medium size) of whole kernel corn (including the liquid)
1 can (large size) pitted black olives, drained
1 - 15 oz. can tomato sauce
1 cup milk
1 cup corn meal
2 Tbsp. Chili Powder
1 tsp. Salt
1/4 tsp. ground black pepper
Instructions
In a large cast iron skillet: Cook the vegetables in oil until limp. Add and cook until brown and crumbly the ground beef. Add and cook until bubbly, the corn, olives, tomato sauce, and milk. Add and cook until bubbly again: corn meal, chili powder, salt and pepper. Leave in the skillet (or turn into a casserole dish) and bake at 350 degrees F. for 1 hour.
