Spinach & Asiago Veggie Burgers

The addition of spinach and Asiago cheese livens up a quickly microwaved veggie burger."


1 veggie burger (of your choice)
1 Kaiser roll (fresh, not bagged)
2 oz. fresh baby spinach
1 thin slice of red ("purple") onion
2 oz. Asiago cheese (shredded)
Olive Oil
Garlic Powder


Place a full handful of spinach on a microwaveable plate with a veggie burger on top. Microwave for 2 minutes (times vary).

Slice Kaiser roll in half and toast lightly.

Remove burger and sprinkle readily w/ shredded asiago cheese. Cover it with the bottom half of the Kaiser roll, and invert it onto another plate. Dust it with garlic powder and place a very thin slice of red onion on top. Add more asiago cheese and a few pieces of fresh spinach just to cover. Drizzle with a tiny bit of olive oil. Microwave for 30 seconds.

Top the burger with the remaining 1/2 of the Kaiser roll and serve.

Serving suggestion: Seared carrot strips topped with butter or very lightly salted, crisp french fries.
